Spaghetti and meatballs…easy spaghetti and meatballs! That’s what I was thinking of making for supper so I pulled out ready rolled lamb meatballs (I will need to do a recipe post on these one day! Insha-Allah) and I started on the easiest simplest arrabiata ever.
You know me, I am lazy and love easy meals. This is one of them, start with the sauce first!
In your sauce pan, throw in the cheats version of sautéed onions (I do this ALL THE TIME and it works like a bomb!! Love it!) one handful of ready fried onions with a good splodge of ghee and splash of olive oil.
Let it heat slowly.
Now add one regular tin of chopped peeled tomatoes (you can give it a quick whizz in your blender if you like it finer, I did that….and yes I do love the cheat’s way of cooking! But mum told me those tinned tomatoes are bad so if you want to make better choices, add about 3-4 grated {whizz in the machine} tomatoes), 2 cloves of sliced garlic, 1 sachet tomatoe paste and the following spices:
S&P to taste
1/2 tsp turmeric
1/2 tsp rough red chilli
1/4 tsp sugar
1/2 tsp lemon pepper
1 slit green chilli
Give it a good mix.
Throw in those meatballs
Now just let it cook til done.
Get the pasta water boiling and add your pasta when ready. I landed up using an open packet of pasta shells, they are so good for holding sauce, but also because apparently the Mr doesn’t like spaghetti! Who on earth does not like spaghetti?? Is that normal?
So throw in the pasta and boil until al dente, about 8 minutes in rapid boiling salted water if you are using the packaged kinda pasta.
To your arrabiata..add chopped Italian parsley or chives or regular fresh chopped coriander before serving.
Pasta plus sauce plus meatballs…
