Sugar Free Chocolate Cupcakes with gluten free flours

Sometimes no matter how healthy you are trying to be……that craving for chocolate and cake just can’t be ignored.

Now ordinarily I would say..”Eat that slice! Just don’t overdo it!” but this time I just couldn’t compromise my sugar-free promise to my doc and my close friend who journeys with me for the next two weeks in our pact to cut out the bad sugars

And when the craving took over and denied me the ability to think of anything else….I HAD to find a solution

And one cold night, the chocolate cake evolved into Fehmz’s own version of a *kinda* trying-to-be-healthy chocolate cupcake.

Please note, this recipe does not claim to be suitable for diabetics nor gluten free, however it does attempt to use *healthier* alternative ingredients.

Nutritional information is based on ingredients and is a mere estimation using web-based nutritional calculators.

Ingredients:

3 tblsp Olive Oil
3 eggs
13g Sweetener (or any equivalent to 2/3 cup castor sugar)
1/2 cup Chickpea flour (gluten free)
1/2 cup Rice Flour (gluten free)
3-3.5 tsp baking powder
2 heaped tblsp cocoa powder
1/2 cup boiling water
3 tsp Agave syrup

Method:

Preheat oven to 180 degrees celcius.

Combine boiling water and Cocoa powder and keep aside while you begin batter.

Beat eggs, sweetener and olive oil very well til mixture begins to get fluffy.
Add agave syrup and mix well

Sift together the baking powder, chickpea flour and rice flour.

Alternate flour mixture and cocoa mixture into batter, beating well between each addition.

Pour into greased cupcake baking moulds and bake for 12-15minutes until done.

Frost as desired

Enjoy!

Can be frosted with salted peanut butter cocoa frosting!

Frosting:

Combine 3 tblsp softened peanut butter
2 tsp cocoa powder
Crushed salt to taste
….and enough milk to make a soft frosting. (less than 1/4 cup)

Beat well until smooth

*warning….WARNING….this does not taste like the moist traditional {bad} chocolate cake but it does satisfy the chocolate and is better than other sugar-free versions that I have found on the internet and experimented with!*
