I love cooking a whole piece of fillet steak and then tearing the strands off and munching down with some gravy or mash or veggies….anything goes really.
So this time, I did whole fillet steak with couscous.
Delicious!! and though the Steak was delicious, the star of the night was the couscous….definitely a winner!
Spice Rub for Whole Fillet Steak
In a small dish or directly into your pot add:
A splash of Olive oil
3 tblsp tomato paste
salt & pepper
3 tblsp brown vinegar
1 tsp meat tenderiser
1 tsp barbeque spice
1 tsp ginger garlic masala
2 tblsp worcestershire sauce
1 sliced red onion
1 tsp mustard powder
3-4 tblsp honey
1 piece of cinnamon stick
a good squeeze of barbeque sauce
Make a paste and rub your fillet well, poke your knife into the fillet and try to rub some of the paste into those slits as well.
Cook on low for 45minutes to an hour
When almost done, add a splash of fresh cream if you like.
Top with a handful of chopped coriander and enjoy!
Chickpea and Veg Couscous
Bring to a boil one cup water with:
6 florets of baby broccoli – chopped
1 carrot – julienned and then chopped into tiny cubes
100g sliced sugar snap peas
1 can of drained chickpeas
2tblsp olive oil
2-3 tsp aromat
zest of half a lemon
juice from half a lemon
1/2 tsp crushed garlic
Do not overboil as you don’t want to lose too much water. Switch off the stove and remove pot from heat.
Add 250g couscous, stir in and close lid.
Check after 5 mins and use a fork to mix it, this helps to separate grains. Leave for another few minutes and check again.
Leave aside until ready to serve. Or you can stuff them into peppers and bake, covered with foil, in a hot oven.
I still can’t believe how EASY it is to make yummy couscous!!
