Patteria Casserole

I received a request yesterday for my patteria casserole from one of my readers, Nasreen Cassim.

So here goes….

Now with all my recipes, variations are possible, and of course encouraged.

Many people who make this recipe make a tomato chutney to top the patteria before adding the rest. This is entirely up to you and what you like.


Patteria Casserole:

Lay sliced patteria onto a greased baking tray (I use a teflon baking sheet)
Drizzle with olive oil and bake in the oven until done. Turning once.

Once done. Layer onto the bottom of your chosen ovenproof dish.

Then I give them all a light sprinkle of lemon juice.

Pour over one tin of creamstyle corn.

Now pour over 250 ml of fresh cream (unwhipped)

Top with grated cheese and a sprinkle of chopped chives/dried parsley.
Place into a preheated oven at 180 degrees celcius for 20-30 minutes.

In the meantime cut some samoosa pur/pastry into smaller slices (squares or strips) and fry in hot oil til golden.

Remove casserole from oven, top with fried pastry and serve.
