Vegetables…….a word that bring out sudden (fake) allergic reactions in some homes from kids & husbands…..pure resistance!
This dish however could practically be a veggie fondue!
On an oven tray. Or in a roasting dish….
Toss potatoes, butternut, sweet potato, carrots and onion with garlic butter, dried rosemary, dried thyme, salt & pepper, drizzle with some olive oil. Cover with foil. Bake on 180 for 40 minutes, remove foil and let it caramelise til done 🙂
Sauce: 1/2 tin creamstyle corn 2 tblsp flour 250ml fresh cream 1/4 cup mayonnaise Salt & pepper 2 tsp green masala Half a handful of cheese/mozarella
Cook til done on medium heat. Serve on the side with veggies.
Variation, make sauce minus the cheese. Pour it all over veggies, sprinkle with cheese and grill in the oven til melted.
