Oriental Oven-Fried Chicken ~ recipe by Fehmz
Cut two-three chicken breasts into chunks
Preheat oven to 200 degrees
Take two bowls: Add an egg to one bowl and whisk (If you don’t want to waste an egg *like me* I make a flour paste with 1/4 cup water and enough flour to make a medium paste)
In the second bowl add 1/3 cup flour, 1/3 cup cornflake crumbs (cornflakes whizzed in the machine to become crumbs), salt, pepper, chilli powder, 1/2 tsp baking powder. Mix well
Dip chicken chunks into the egg (or flour paste) and then into dry flour and crumb mixture.
Lay it onto a greased baking sheet, give it a very light drizzle of olive oil and bake in oven, turn once to ensure it’s cooked entirely
In a medium saucepan heat: 1/2 cup water 4 tblsp soya sauce 3 tblsp sweet chilli sauce 1 tsp fresh ground chillies 1 tsp ginger garlic masala 1 tblsp lemon juice (a good squirt) 2 tsp orange marmalade (if you don’t have marmalade use apricot jam) Some chopped dhania
Heat all the above.
In a cup add 1/2 cup water and 1&1/2 tsp maizena
Check the chicken in the oven (it’s perfectly ok if the flour is still visible on the chicken)
When the chicken is cooked, remove from the oven. Now add the maizena mixture to the sauce and let it thicken. Then add chicken to the thickened sauce. Add chopped spring onions, and a generous dash of toasted sesame seeds.
Serve on a bed of rice noodles or sticky white rice.
