My mini phyllo lemon meringue tarts were born out of a love for lemon meringue pie and the crispiness of phyllo.
The lemon curd is not too tart yet gives the right kind of kick and the fluffy soft meringue adds just the right amount of lightness to the dish all nestled in crispy crackling layers of phyllo. The perfect individual serving.
