When i see a beautiful bunch of fresh methi bhaji or coriander, I just can’t resist buying it!
Standing outside the local spice shop, Akhalwayas on Hanover street, Mayfair, my eyes could not be peeled from the beautiful bunches [might also be my craving for bhaji in all forms....especially paani wari bhaji...a water based soup like version], so I promptly bought 4 bunches at once.
At home, they were plucked, cleaned and washed….two bunches were packed and freezed and the other two waiting to be included in that night’s dinner.
So this is what I did:
Add some olive oil to a pan and saute one onion with a piece of cinnamon stick and a pinch of whole jeera.
1 kg cubed Chicken
1tsp Red chilli powder
1/4 tsp turmeric
1/2 tsp dhana jeero
Close the lid and leave to cook for a little while.
After a few minutes, add 2-3 grated tomatoes and one sachet tomato paste.
In the meantime, peel 3-4 potatoes and cut into cubes/quarters.
Add to pot with some extra water
Check flavour and add more spice if required.
Close and cook until potatoes soften.
Halfway through the potatoes getting done, add the methi bhaji that’s been patiently waiting.
When done, serve hot with roti
