Two nights ago we had mutton curry and rice for supper. Mutton curry and rice is my comfort food and my “I’m sorry” food for when I want to pamper my husband if I’ve been particularly antsy and annoying……which I sometimes cannot help. Lol
I firmly believe it’s because of my annoying behaviour that he fell in love with me in the first place no matter how much he doth protest.
So being the “just throw into the pot” kinda gal, I made about a cup of rice extra. Lol (it was all part of my evil plan to have less to prepare for the next supper…muahahaha)
And so last night….voila!
Prawn Spiced Rice
Leftover rice (kept aside)
To a saucepan add:
- 2 tblsp peri peri oil
- 1 tsp crushed garlic
- 1-2 cups of prawn meat – these are much smaller prawns but not as tiny as shrimp – perfect for Prawn Bisque’s and *budget* expensive meals – also works straight from frozen (if you want to use bigger prawns then throw in a dozen queen prawns)
- Dash of soy sauce
- 2 tblsp Nando’s Hot Peri Peri sauce
- Salt to taste
- 2 tsp fresh chopped green chilli (or less if your tastebuds are sensitive)
- 1/2 tsp peri peri powder
- juice of one lemon
- 2 tblsp honey
- 1 tsp portugese spice
- 1 tsp lemon pepper
Cook all the above until the sauce has reduced and starts to thicken. Add the rice and toss. Heat for a few more minutes on the stove top. Add chopped chives and serve hot!
