Throwing together something fairly healthy with stuff from my less-than-healthy fridge could be a challenge.
But I wanted a quick quick supper so I bought pre-marinated wings from the butcher and got hubby to air-fry it while I threw together a scrumptious salad with whatever was lying in the fridge.
And let me tell you….omnomnom!! This meal came out amazing but next time, I’m going to make it with spicy crispy strips like the KFC Zinger chicken. Next level stuff!!
So the salad:
1/2 red cabbage, sliced finely
1/2 head of lettuce, sliced finely
2-3 carrots julienned
Blocks of feta
Whatever else takes your fancy!
Throw it all together and pour over this AMAZE-balls dressing.
3-4 tblsp Honey
1 clove garlic, chopped
1/4 cup soy sauce
Glug of EV Olive Oil
1/2 finely ground chilli (I used Habanero)
Mix well and pour over the salad.
Sprinkle with black sesame seeds.
Top with chicken. Serve.
Crunchy yummy chicken salad….just like that!
