A few weeks ago I received a request for a Roast Chicken recipe from Attiya Khan.
She tried my recipe….albeit a very much “shoot from the hip” type recipe but for the ladies who are interested here you go:
Roast Chicken
“Want to know a secret?…..in my roast chicken recipe i throw in everything but the kitchen sink
so if you don’t mind I’m gonna list the ingredients I throw in….how much is totally up to you but if you want quantities, I can sit and try to sort out…..i usually just eye-ball it. But next time I make it i’ll be sure to check measurements
so this is what I use:
salt freshly chopped garlic ginger garlic masala (yes i use this even though i’ve added some fresh chopped garlic pepper rough red chilli find red chilli 2 slit green chillies
haldi/turmeric a pinch of white pepper chicken spice lemon pepper chopped coriander dried parsley portuguese peri peri spice pinch of sugar
add the above to: olive oil tomato sauce worscestershire sauce crosse&blackwell chilli sauce (optional) 1 packet tomato paste 1/2 tin tomato puree (can leave this out if you use an extra packet tomato paste) lemon juice apricot jam/honey (trust me on this one) some water
combine all, add to chicken and cook til done.
add extra chopped coriander and check the taste to see if you would like to add anything else :)”
