Chickpea Pasta Salad with Basil & Lime

When you stop eating potato salad, you look for a gajillion alternatives to pasta salad, because let’s face it, beans salad just doesn’t cut it.

So today we had a brunch braai and chickpea pasta salad it was.

Boil half a packet of pasta (your choice of shape, bowtie, macaroni etc.)

In a bowl add:

1/4 cup mayonnaise

juice of 2 limes

salt

pepper

1/2 tsp crushed garlic

1/2 tsp chopped green chilli

1/4 cup chopped robot peppers (optional)

handful of torn basil leaves

1 tin of chickpeas – drained

Combine and toss pasta into bowl. Mix well. Chill and serve, add a final sprinkle of lime juice for a little extra kick 🙂
