Chicken Filling for Moons or any other savouries……preparing for ramadhaan brings about the time to prepare fillings, pastry and all things like…
So here’s my chicken filling recipe:
2 kg cubed Chicken Fillet
Olive Oil – for cooking
salt & pepper
2 tsp crushed Garlic
1 tsp crushed Ginger
1-2 tsp crushed jeera
1/2 tsp whole jeera
2-3 tsp finely chopped green chilli (according to taste)
1-2 tsp lemon pepper
1 tsp Chicken Spice
Lemon Juice – a good squirt
1/3-1/2 cup chopped coriander
Cook all the above.
When the water has reduced, add:
2-3 tsp mustard seeds
Handful of curry leaves – sliced thinly
Cook til done. Taste and adjust spices as required.
I like my filling more saucy….so I add a little white sauce:
1/2 – 1 cup milk plus 3-4 tblsp flour – combine well and add to filling
Cook again until you are happy.
Cool and use to fill moons/pies/calzones etc.
This filling can even be used as the chicken part in springrolls, just add cooked spaghetti and julienned vegetables.
I dip my moons in a thin flour/water mixture and dip into breadcrumbs that have been tossed with crushed vermicelli, sesame seeds & crushed cornflakes.
