Butter Beans Curry & Rice

Meat-free Monday……a challenge that I try to meet every now and again….despite the MK insisting he needs meat for every main meal *rolling eyes*

 

So this Monday, I made Butter Beans curry and rice…..I love butter beans!!

 

So since I am a lazy one……I buy the butter beans in the tin. All ready for my curry development.

 

You need:

2 tins Butter Beans

3 grated tomatoes or 1 tin finely chopped tomatoes

1 onion finely chopped

salt

pepper

turmeric

chilli powder

dhana jeero

whole jeero

nutmeg

garlic

 

Saute the onion with olive oil and a sprinkle of whole jeero.

Once trranslucent, add the tomatoes and the spices (as per your requirement), and a little pinch of nutmeg (secret ingredient) and cook for a little while.

Drain halfway, the two tins of butterbeans and add to tomato gravy.

Add Butter beans to tomato gravy

Add more water as necessary and cook until done.

Before serving add a handful of chopped coriander.

Enjoy with roti or sella rice.
