Sunday lazy indulgent breakfasts……..Aloo fry
Thinly sliced potatoes spiced and layered into a saucepan to cook til soft and nearly mushy.
Slice 3 potatoes into thin disks (use a Mandolin slicer if you have one)
In a bowl add:
1 cup water
1/2 tsp turmeric/haldi
1/2 tsp dhana jeero
2 tsp lemon juice
1.2 tsp crushed garlic
1 tsp fine red chilli powder
1 tsp freshly chopped green chilli
1 handful fried onions (if you do not have fried onions then leave this out and saute fresh chopped onion in a pan with your curry leaves and mustard seeds)
1 grated tomato
Add all the above to the potatoes and coat well.
In a deep saucepan, add 3 tblsp olive oil, 1 tsp mustard seeds and 3-4 curry leaves. Saute for a little while until you hear the mustard seeds begin to pop.
Then add the potatoes and masala in, close the lid and cook on medium to low heat until done.
This is also the perfect mix to mash and make potato bhajias with or even Aloo Parathas.
